Meet the Crew
COO & Beer Queen
Celeste is Clark and Jenny’s youngest child. She received her Bachelor’s
Degree in Entrepreneurship and Innovation Management from WCU. Celeste
has worked over a decade in the hospitality industry and has years of intensive
management experience with a multibillion dollar corporation. We are lucky
to have her infusion of music, art, and business acumen.
Clark is a native of Canton NC, is a retired United States Marine and
Operation Iraqi Freedom Veteran. During his time in the Marines, he sailed
around the world numerous times and did two tours as a Drill Instructor at
Marine Corps Recruit Depot, Parris Island. He continues to have the same
passion that led him to the Marines pushing him to open the brewery in 2011,
and continues to make exceptional hand crafted beers that are both distinct in
their ingredients and attitude.
Jenny Williams is a native of Western NC and received a BSN from WCU and
worked in both military and civilian healthcare. Jenny is a retired US Navy
Nurse Corps Commander and Desert Storm veteran. She’s now fully retired,
and enjoys home renovation projects, quilting, baking and taste testing for the
brewery, of course.

A Brief History
Once I retired from service in 2003 and still at the young age of 41, I took the job as plant manager of a chemical company. I quickly fell in love with “the process.” The manufacturing bug had bitten and I sought, and received greater responsibilities and
challenges including raw material requisition and logistics planning.
My wife and I have always loved craft beer and regularly toured breweries and did tastings whenever we were traveling or on vacations. In 2008 when we went to New Mexico it was no different. We toured Sierra Blanca Brewery, Santa Fe Brewing, and the smallest Kelly’s brew pub in Albuquerque. I guess this was the first time I noticed the actual people behind the beer, easy going, a love for the craft and the science behind it…I fell in love all over again.
My beer brewing kit was waiting on me when I returned from New Mexico and I brewed my first batch of homebrew!
That was 2008 with a 5-gallon home-brew system, and now we produce over 700 barrels a year! Frog Level Brewing was the first brewery in Haywood County! With no formal brewery training, we held over 80 free beer tastings in 2010 to verify that we had perfected our beer style, matched that style with award winning recipes. In addition, we established a fan base, and narrowed down our flagship beers based off tasting reviews.
I’m just a guy with a passion and a dream. I have a passion for making a great product better, by using the science behind that product, and a notion that doing something I love to do for the community that I live, support, and thrive in will make a difference for all of us.
